Risotto has a reputation of being temperamental and time consuming, or is associated with gourmet restaurants, but it is actually the epitome of Italian home cooking and very simple to make. Please don’t let the “r” word intimidate you. Essentially, it is creamy rice but NEVER mushy rice. So, to achieve the most divinely Creamy Chicken and Rice without teetering on the abhorrent mushy, I turned to the obviously creamiest rice – risotto! Risotto is unbelievably creamy, velvety, buttery, savory, salty – without any heavy cream AND it is extremely forgiving. In perfecting this Chicken and Rice recipe, I wanted to stay far away from the fine line between creamy rice and mushy rice. My goal with this Creamy Chicken and Rice recipe was to create a quick, one-pot dinner without any canned soups – mission accomplished! This chicken and rice recipe is easy, budget-friendly and made with pantry friendly ingredients such as chicken, diced tomatoes, chicken broth, onions, garlic, carrots, celery and rice – not to mention it’s SO satisfying, SO comforting, and SO outrageously delicious. Now take chicken and rice and transform it into creamy chicken and rice and just hand me the whole pot. I highly recommend that you don’t leave out the cream and substitute with broth. You can substitute dried herbs for the fresh, and feel free to use both the rosemary and thyme if you like a lot of herbs. I’d maybe par cook the brown rice first and then proceed as instructed. Without testing, I can’t say for sure if brown rice will work in this recipe because I don’t think you’d want to cook the chicken that long. Brown rice would be a little trickier since it takes twice as long to cook. Stir in peas and cream, cover and cook until rice is fully tender.Bring mixture to a boil then cover and simmer until liquid has been absorbed and rice is nearly tender.Add in rice, chicken broth and thyme and season with salt and pepper.Cook chicken in skillet, adding garlic near the end.Saute onion, carrots and celery in oil.Over-cooked chicken breasts wouldn’t do this recipe any favors. That’s fine, but I do think the thighs are best here as they have more flavor.ĭo note that if you are using chicken breasts I definitely wouldn’t cook them entire time, as the thighs do.
